What does “fermented” mean?

Fermentation is a traditional way of preserving food using salt or brine and time. The process naturally develops the tangy flavors and textures characteristic of fermented vegetables.

Are all Motherland products fermented?

No. Our sauerkraut, green tomatoes, and kimchi are naturally fermented, while our carrot salad is a prepared food and is not fermented.

Do your products need to be refrigerated?

Yes. Our products are refrigerated foods and should be kept refrigerated. Always follow the storage instructions on the package.

How long do your products last?

Shelf life varies by product. Check the date and storage instructions on the package, and keep the product refrigerated after opening.

Why does my fermented product hiss or release gas when I open it?

Fermentation can continue slowly under refrigeration, so a small amount of pressure or a gentle hiss can be normal. If the product seems unusual or you're concerned about it, contact us before eating it.

Why is the brine cloudy?

Cloudy brine can be a normal result of the fermentation process. Natural fermented foods don't always look perfectly clear or identical from batch to batch.

Will every batch taste exactly the same?

Not necessarily. We use real vegetables and traditional processes, so natural differences in produce, season and fermentation can create slight variations in flavor, color and texture.

What is sauerkraut?

Sauerkraut is cabbage preserved through fermentation with salt. It's naturally tangy, crisp and one of the most familiar traditional fermented foods.

What are fermented green tomatoes?

They're green tomatoes preserved through fermentation rather than conventional vinegar pickling. Our version is based on a family recipe and seasoned with herbs and spices.

Are your carrots fermented?

No. Our carrot salad is a fresh prepared product made with thin-cut carrots, garlic, spices, oil and vinegar.

How should I eat sauerkraut?

Eat it cold as a side, add it to sandwiches, sausages or bowls, or serve it alongside meat, potatoes and other savory foods. There really isn't a wrong way to use it.

How should I eat the carrot salad?

It's ready to eat straight from the container. Serve it cold as a side dish or add it to sandwiches, wraps, bowls and larger spreads.

How should I eat fermented green tomatoes?

They're ready to eat cold as a snack, side dish or accompaniment to a meal. They pair particularly well with savory foods, meats, potatoes and sandwiches.

Can I use the leftover fermentation brine?

Yes, provided the product has been properly stored and handled. The brine is flavorful and can be used in dressings, marinades and other recipes.

Why does my product look different from the last one I bought?

Vegetables naturally vary in size, color, moisture and texture throughout the year. Small variations between batches are part of working with real ingredients.

Our products are made in Florida by Motherland Pickle Co., a Lireda Foods brand. We're based in the Melbourne / Space Coast area.

Where can I buy your products?

What if my product doesn't look, smell or taste right?
